Cherry Ripes- LOVE ‘EM…a lot
Downside- truckloads of sugar. I don’t eat sugar. WE DON’T EAT SUGAR!! Insert genius brainwave: Strawberries plus coconut plus cacao = same, same but different (and better!). See how my brain works?
Berry Ripe Bites
Use Strawberries, Blueberries or raspberries
Punnet of berries, chopped (if using strawbs)
8-10 tbsp of coconut oil
5 small handfuls of coconut shredded (no added sugar)
Heaped 1/4 cup of raw cacao powder (this is not treated like cocoa is!)
Stevia can be added but isn’t necessary- the berries add sweetness just by themselves
I used strawberries for my batch, you can alternate with any berries. Cherries may be used when in season however they are a higher sugar fruit- the berries are both lower sugar and fructose. Chop strawberries into a medium dice
Mix cacao with oil, add coconut then add berries.
Line a baking tray with baking paper and spray with coconut oil
Next, clump the mixture into tbsp blobs on the paper. Just form messy balls with your hands (or get the kids to it, they LOVE getting dirty!)
You should have approx. 15 balls, you can now either place in the fridge or freezer and allow them to set. It’ll only take a few minutes and then like magic, BOOM, your Berry Ripe Bites will be ready for eating.
Keep in the fridge, as they will melt if left out too long. They will be fine for 4-5 days in the fridge….as if they will last that long!
