Cacao, Blueberry & Apple Almond Meal Cake

No Added sugar, gluten free and also doubles as a breakfast!

Serves 6

1.5 cups of almond meal
1 punnet of blueberries
1 cup of pie apples (because that’s what I had available, use other stewed fruit if you like)
2 eggs
200ml coconut water
1 tsbp coconut oil
Cacao (for dusting)

Mix eggs and coconut water together, then place this mixture with the rest of the ingredients, in a bowl (apart from the cacao). Mix well till combined

Use a pie dish for the mixture. Place the cacao in a sifter and dust over the top

Place in preheated oven (200 degrees celsius) for 45 mins. It’ll be a moist pie/cakey surprise!

Serve with Peanut Butter Ice Cream
