Clean Eating Gluten Free Porridge

All of these ingredients tend to be staples in my cupboard so really make this breakfast dish easy and quick to prepare. Winter calls for a toasty warm breakfast option and this hits the spot!

There are no packet cereal special “gluten free” whatever’s in here, just wholesome ingredients. This is a great way to use up leftover brown rice from your dinners or other meal prep. A cost effective breakfast or snack idea!

You’ll need:

3/4 cup cooked brown rice (aim for organic if you can get it)
1/4 cup coconut milk (whole fat not lite/light)
1/4 cup water
1 tsp Cinnamon
1/2 banana, pear or berries (chopped into small pieces)
4 crushed Macadamias

Serves 1, roughly 450 cals/serving

Place coconut milk, water, fruit and cinnamon in a small saucepan and heat on low to medium heat. When warmed through add rice and stir, heat for another minute or two, then serve

Sprinkle crushed nuts on the top and enjoy!
