Fluffy Buttermilk 50DaysNoSugar Pancakes

My amazingly talented, chefy, food writer, funny & fabulous friend Jessica Brook developed this recipe. I implore you to make it NOW! Except if you are about to go to bed, go to bed, sleep, then make them!

Ingredients:

1 1/4 cup butter milk
1 cup ricotta
1 teaspoon lemon zest
1 teaspoon grapefruit zest
3 eggs separated
1 1/2 cups self raising flour
1 teaspoon bicarbonate soda

Mix the buttermilk, ricotta , zest and egg yolks together. Add the flour and bicarbonate soda together and set aside. Whisk the egg white to stuff peaks and fold into the flour mixture.

Heat a large frying pan over medium heat. In batches cook spoonfuls of batter in a lightly greased pan. Cook for 2 -3 minutes I until bubbles appear. Turn and cook for a further 1-2 minutes. Serve warm with yoghurt and blueberries.

Makes 6 medium pancakes
