Make Your Own: Cacao Chocolate

Weight loss & anti-sickness chocolate? Does it even exist? Well don’t take me too literally but yes this amazing recipe created by yours truly is the best way to kill those sugar cravings, boost immunity and maintain good fats (leaving out the shitty sugar and bad fats) in your diet. You should well know by now I’m no fan of added sugar and have helped thousands see the benefit of avoiding it through my challenge: 50DaysNoSugar. Can you really live without sugar? Hell YES! All you need is your plan, a little willpower and you are on your way. You don’t miss out on yummy foods you just make simple swaps. 

The main ingredients in my chocolate? Coconut Oil. Available in most health food stores even in some supermarkets. Virgin organic is best. Coconut oil is a healthy oil to add in your diet and help boost metabolism. Like anything in life, you can have too much of a good thing however a few tbsps added to your cooking will provide you with the essential building blocks your brain needs. Coconut oil boosts immunity and can help improve skin conditions (applied directly to the skin!). Bonus: Coconut oil has a high smoke point and a coconutty flavour, so can be added to Asian based dishes and/or used in baking. More on coconut oil here. OK, OK, OK- Move on to the chocolate, sista! (I hear you all….). There’s no need to sell it anymore, just make it!

Cacao nutty choccie

Makes about 35 squares

5 tbsp coconut oil
5 tbsp cacao powder
1 Vanilla bean (guts)
Matchstick head (size) of stevia (be very light handed!)
1/2 cup fine chopped nuts
Salt to sprinkle over chocolate at the end
Options: add dried chilli flakes or finely grated orange peel (you can jazz up the flavour to suit your tastes)
On a low heat on the stove top heat the oil and stir through sifted cacao powder, drop in the vanilla bean guts  and stevia. My stevia is powdered (from so I mix with a few tsps of water and as mentioned I’m extremely light handed (I literally put a match stick heads worth- the stuff is STRONG & PURE!)

Once all combined and melted down (should only take a less than 2-3 mins) take off heat and add nuts. Stir through and pop to one side.

Next, place a sheet of non-stick baking paper down on a tray and pour the chocolate mixture evenly to cool in the fridge. The idea is to then cut it into smallish squares, so “apply” it to the tray as one even layer (geddit?!)

Once firm (wait a minimum of 30mins) cut into large squares and EAT. 

Delightful with a cuppa (no sugar added of course!)

Store: In an airtight container, layer squares between non stock baking paper. If you don’t eat it all at once, keep for 7-10 days in the fridge! It melts quickly.
