Peanut Butter Ice Cream

Say what?????? Yep, you heard Peanut. Butter. Ice. Cream

Easy! ZERO added sugar (just the naturally occurring sugar from the PB & yoghurt). No sugar highs but so delicious.

Serves 2 greedy faces!

200ml Cream*
100g greek Yoghurt*
2 LARGE tbsp of Smooth or Crunchy Peanut Butter (add a few drops of hot water to loose it up if it needs it.). Nut allergy? Use fruit instead
*Use Full fat and can substitute for coconut cream (it just won’t thicken when you whip it)

Whip cream to thicken it, just till it comes together and you can dollop it. Fold the yoghurt into the cream with the pb.

Place in a freezer proof container and at 30 mins intervals, pull it out and stir away ice crystals. Do this for 2-3 hours (i.e 4-6 stirs)

Scoop out and serve with Cacao, Blueberry and Apple Almond Meal Cake
