Power Snack- Pineapple, Goji’s, Yoghurt and Walnuts

I love coming up with delicious and nutritious (ha..a poet, who would’a thought?) snacks that are quick to make as I literally have one foot out the door and one tying a shoe lace in between clients.
This is my Pineapple power snack and It is good, even if I do say so myself. I also timed how long it took me to make and its 2:35 minutes, so don’t even try to tell me you have no time!
Pineapple has high levels of fibre and bone strengthening properties, walnuts are great for hormone levels, goji berries help maintain blood sugar levels and yoghurt helps strengthen and stabilise the immune system. See that’s why I called it a Power Snack, so much goodness.
Chop 1/2 cup Pineapple, dollop of large blob of yoghurt on top (about 100g) , crush up 1 tablespoon of walnuts and sprinkle a tablespoon of goji berries. Volia! Done! Yum!
