I’ve had a bumper crop of tomatoes this year and I’ve been loving a bit of fresh made tomato sauce to serve up on the side of grilled meats, homemade sausage rolls and with pasta.
I don’t complicate things, this is 3 ingredients and anyone can do it. This recipe isn’t for fussy eaters however I’ve served it up to “all kinds” and I’ve had no negative feedback. I use my thick rich sauce quickly- as there are no preservatives/no added sugar it doesn’t store well (a week in the fridge is fine).
Handful of fresh cherry tomatoes (Washed. I leave seeds/skins on)
Splash of water
Tomato paste, dollop
Worcestershire sauce, dribble
Salt/Pepper to taste
I place all items in my pan and squash down the tomatoes to break them up. Stir to combine and then let simmer and reduce down for 10 mins or so. Stir if needed along the way. I simply store it in a glass jar and keep it in the fridge. Fuss free and so more tastier than the plastic bottle variety.
