Sugarfree Ice Cream Sandwiches & Pancake Stacks

Your eyes are not deceiving you…you heard it here! Ice cream sandwiches and Pancake Stacks- 50DaysNoSugar style of course

All low sugar (only coming from fruit- berries) and contains no added sugar! The avocado provides a creamy texture, so great for dairy “avoiders”, vegans, vegetarians and those with gluten intolerance

Ice Cream:

Makes 3-4 small scoops

1 Avocado
2 cups of frozen berries
Splash of coconut cream/water
2 tsp raw cacao powder

In a bowl, place flesh of avocado, berries, coconut cream or coconut water and cacao powder.

Using a hand mixer, whizz all ingredients till combined and smooth. Place in a freezer proof container and leave in the freezer to firm up.

Be adventurous and try different fruit combos with the avocado- Banana, peanut butter and cacao (BOOM!!!!). You need to use (eat!) your ice cream immediately as it won’t keep well in the freezer. Ha! As if you guys will have left overs anyway!

Extra: Coat the sides in nut rubble! Smash up your favourite nuts and roll the sides on your ice cream sandwiches in it- delish.

Pancakes
(gluten free)

Makes 6-8 mini pancakes

1/2 cup Quinoa Flour ( I have used Red Mill, available at Health Food Stores and Gourmet grocers)
1/2 organic milk
1 vanilla bean (seeds/flesh only)
Add stevia to the mixture if you need a little sweetness

Place all ingredients in a large bowl and whisk to combined and fluffy

Heat non-stick pan with coconut oil and place small batches into your pan. When air holes appear on the pancake flip over with an egg flip and brown on other side. Place to one side on kitchen towel

Assembly:

Ice cream sandwich- Place a scoop of ice cream between two cooled pancakes, you can place in the freezer while you prepare others and then serve immediately. These will not store well in the freezer once made, so eat immediately

Pancake stack- Place a scoop of ice cream between a pancake and repeat process with 3-4 pancakes. You can add an addition of whipped cream on top if you desire.
