Sumac Chicken with roasted vegetables

I love sharing and making meals for my partner and I but sometimes I really do love a quick, special meal for one!
Sumac has a lemony scent and flavour to it. Its a main feature in Lebanese/Moroccan cooking. Available at most spice stalls and supermarkets. Its delicious sprinkled on grilled meats and that’s exactly how I like to use it:

Pre-oven to 180 degrees Celsius

Butterfly a small chicken breast (100-150g is plently) and drizzle it with 1 tsp of Olive oil and a light dusting of sumac

Chop up some assorted veg. I had cauliflower, capsicum, red onion and carrots. It’s teaming with the theme of Moroccan cooking (kinda). Dress with 1 tsp of Olive oil and place everything on piece of non-stick baking paper and shove in the oven.

It should take 25-30mins. Serve it with a refreshing yoghurt dip (greek yoghurt with chopped fresh mint) YUM!
