A bliss ball is one of the easiest ways to cure hunger pangs and a great make ahead snack. I love nothing more than that tangy lemon tartiness with a little richness from nuts. This is a reworked version from Wholefood Simply
Juice and rind of 1 largish lemon
1 cup coconut shreds
1 cup raw almonds
2 tbsp Rice Malt Syrup
Blitz rind, nuts and coconut together in a blender then add juice and RMS.
Roll into balls and you can also roll in extra coconut and lemon rind. Place in fridge to harden slightly. Pop in mouth when the mood strikes!
