Want 2 minute noodles that are nutritious, tasty AF and super easy to prep…let’s do it!
In a bowl add some rice noodles to boiling water. Sit them in there to soften (this usually only takes a minute)
While that’s happening shred your veggies: cucumber, carrot and slaw with a mandolin (it’s super fast this way)
Use meat leftovers: a bit of BBQ chook or beef. Chop it small
Noodles will be ready by now so dump the water and drain. Leave noodles in same bowl
Toss your veggies through and add soy sauce, chilli and a little sesame oil. Just do it to taste.
For an indulgent flourish: blitz peanuts in a NutriBullet and make it rain over the top of your noodles, baby!
