The BEST Chicken Sambo Recipe

I know the internet is LITTERED with the best this and the best that but my friends, I’m telling you the truth- this is next level good! It’s full of green too, so you can feel healthy and that little bit smug



Serves 2

200 g Chicken cooked, shredded

Coriander or parsley handful, chopped

Tuscan Kale 3-4 leaves, sliced finely

1 stalk of Celery

2 Good dollops of full fat (whole egg) mayo

Crushed nuts, almonds or walnuts, small handful

1/4 Onion, chopped

Juice of half a lemon

Fresh yummy, grainy sourdough bread or non bread users can try cos lettuce leaves or mountain bread wraps


Combine everything in a bowl, except the bread, mix well and then chill for 20 mins

When you are ready to serve, spoon onto your bottom slice of bread or into your lettuce cups and squash down the top piece of bread. Any leftovers can be used the next day- WIN!

If you want to take it to a whole new level, a cocktail stick with sicilian olives gives it that club sandwich vibe!
